In the first week of March, I had the pleasure to fly out to New York for a very special occasion. I signed up for a course with the master of sugar flowers Mr. Ron Ben-Israel at L’Ecole Valrhona in Brooklyn.
This three day course was the first cake decorating workshop offered by Valrhona Chocolates and I had to be there.
In his light filled cake studio, in the center of Manhattan’s Garment District, we learned all about sugarflowers and Valrhona chocolate. This crash course covered big roses, sweet peas, calla lillies and wild roses. Over the course of these three days I really got me to fall in love sugar flowers and the delicate and precise process of making them.
My fellow students were an eclectic mix from all over the world. Amongst them were pastry chefs, cake decorators but also a doctor and a contractor. This made the group dynamic special and it brought up some interesting topics at our daily questionnaire.
Thanks to Mr. Ben-Israel I really fell in love with sugar flowers and I can’t wait to make beautiful cakes where I can incorporate them.
